This is my heartfelt recipe which I had been cooking for the past 20s years. This recipe is cooked with love each time as the men in my family love this meal a great deal. 4 trays of oxtails (from Costco)
½ can of liver pate
2 Petite Whole Onions frozen ones (Safeway)
3 tbs of unsalted butter
2 tbs of shallot
2 tbs of minced garlic
½ tbs of turmeric
¼ cup of Cognac
14 cups cups of water
½ tsp of five spice powder
2-3 Kaffir lime leaves
8 carrots cut into about one inch in thickness, or you can use baby carrots
1 cup of red onion (thin slices), chopped scallion, and micro-cilantro, ground black pepper, lemon zest and my “Sweet Chili Sate Sauce with Youcook”, a Must.
Wash and pat dry all oxtails. On a clean pan, heat is medium, add in all oxtails and sear all sides. It is more of a browning process to remove impurities such as fat and gamy odor. Do not add oil during this process. Once done, remove them off the pan.
Start a new pan, add 3 tbs of unsalted butter. 2 tbs of shallot. Add 1 piece of brown sugar ½ tbs of turmeric. Stir and mix all the ingredients. Then add in 2 tbs of minced garlic, ½ can of liver pate, ¼ cup of Cognac or Remi Martin. Toss the meat to make they are coated well with all the herbs. Finally add 2 tbs of salt, then add 14 cups of water. Bring it boil. Then turn heat to medium-low and cook for two- three hours. When the meat falls of from the bone, your oxtail is ready. Add in all chopped carrots and add one bag of frozen whole onion. Turn off the heat. Close the lid. If you are preparing on the same day. Best to let it rest in the pot for at least 3 – 4 hours. The hot liquid will continue to cook the carrots and onion at rest. Best to prepare this recipe the night before and chill in the refrigerator. This is the best option as the fat will solidify in the refrigerator. It is easier to remove layer of fat the following day. In addition, preparing this way, the carrots and onion will retain their freshness and crunchiness when serving. You may add two bags of whole frozen onion before placing the pot in the refrigerator. Reheat your oxtail pot and add a second bag of whole frozen onion if you did not add all onion before chilling. Let the whole frozen onion simmer for 15 minutes before serving. Either way works.
Prepare French Bread and cut them into diagonal one-inch slices.
Garnish with flavorful herbs below:
Chopped scallion, cilantro, red onion (thin slices), Salt, black ground pepper, and a zest of lemon juice.
