Apple Pie Cookies

For the Dough
2 ½ cups/308g flour plus more for rolling
4 tablespoons granulated sugar
½ teaspoon sea salt 16 tablespoons unsalted butter chilled
2 tablespoon/30mL s ice water
2 teaspoons ground cinnamon 1 teaspoon all-spice (optional)
½ teaspoon ground ginger (optional)
For the Filling
3 pounds apples (Honey crisp, Golden Delicious, or Cortland)
2/3 cup/ 85g sugar plus more for sprinkling on the pie
2 tablespoons/ 30mL freshly squeezed lemon juice
4 tablespoons unsalted butter
1/4 teaspoon ground cinnamon
½ teaspoon nutmeg
For the Caramel
1 cup/220g brown sugar
½ cup/4 oz cream
1 tablespoon vanilla extract
½ teaspoon salt
For the Egg Wash
1 egg yolk
1 tbsp. cream
For the Crust
1.In a large bowl, combine flour, sugar, salt, and spices. Whisk everything together. Toss in very small grated pieces of chilled butter and add in ice cold water little at a time. You can also use a food processor.
2.Shape into two disk shapes.
3.Wrap the dough in plastic and chill it for about 30 minutes.
4.Separate an egg yolk into a small bowl and add a 1 tablespoon of cream.
5.Roll your pastry dough out to about 1/4″ thick.
6.Use half of the dough for the bases and the other half for the lattice tops. Keep unused dough chilled in the refrigerator, until ready to use.
7.Cut the rolled-out dough into circles, for the base.
8.Add a spoonful of the caramel.
9.Add about 1 tablespoon of the apple pie filling to the center of each circle.
10.Brush the edges with egg wash.
11.Arrange the lattice top and brush with egg wash again.
12.Cut and remove the excess dough with the same round cutter you used for the base.
13.Sprinkle with sugar, and bake at 350° F/176°C for about 20-25 minutes or until golden brown.
For the Filling
14.Roughly chop your apples, then put them in a bowl and add the sugar, spices and lemon juice.
15.Toss them around to make sure they are evenly coated. In a large skillet, melt the butter over medium heat. Add the apples and cook stirring until the sugar dissolves and it begins to simmer, about 4 minutes.
16.Cover with a lid, and reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 10 minutes.
17.Strain the apples over a bowl to get all the excess juices. Return the juices to the skillet, and simmer over medium heat until it starts to thicken and lightly caramelize, this should take about 7-10 minutes.
18.Toss the apples back with the reduced juice and spices. Set aside to cool completely.
For the Caramel
19.Combine brown sugar, cream, vanilla and salt in a sauce pan, and heat over medium heat while whisking.
20.Cook 7-8 minutes or until the caramel has thickened.
21.Remove from heat and set aside.
If you’re short on time you can use frozen pastry dough, pre-made caramel and store-bought pie filling.
