Rice porridge in Chinese culture is considered a comfort and healing food for the sick. It is believed to relieve inflammation and nourish once’s immune system, but it not proven, however. As for my experience raising a set of premature twins many years ago, rice porridge in general promotes healing effect and strong digestion especially during colds and flu season. It is how one prepares the porridge to provide a great nutritional meal for young children as well as suitable for the sick and provides an easily digestible meal to appreciate this meal. Today I am preparing my own version of a Fish Rice Porridge. This recipe is very good for those who just have a surgery in dental work, wisdom teeth removal. The porridge itself provides a healing and soothing effect. The fish (Filet only) is soft and easy to eat and provides good protein portion if he or she can tolerate.
Ingredients for porridge
3 cups of rice
12 cups of water
2 tsp of salt
2 cups of milk
Ingredients and preparation for fish filet:
3 pounds of cod filet
2 tbs of sesame oil
1 tbs of cooking oil
1 tsp of peppercorn pepper
2 tbs of white wine
2 tsp of salt
1 tsp of ginger powder
Sweet chili sauce
Chopped cilantro and green onion
Strips of fresh ginger
I am preparing for a family of five. Using three cups of rice, rinse a few times to remove impurities. Add 12 cups of water, add two tsp of salt. Bring it to boil and turn down the heat to medium. Cook for 15 minutes. Then add in 4 cups of milk. Cook for another five minutes. Transfer the porridge to a blender and puree all. Healthy adults without dental work can skip the puree part. Then transfer it back to a new pot and bring it to boil once again. Once boiled. Add in the marinated fish filet and turn off the heat.
Two different ways of servings:
For normal and healthy adults- skip puree process and garnish porridge with chopped green onion and cilantro, strips of ginger, smashed roasted peanuts, Hoisin Sauce, and my sweet chili sauce.
2. For the sick or someone who just had dental work such as wisdom teeth removal
Hope you find this recipe useful. I cooked this type of porridge many years ago, each time, I added a different type of protein, chicken, pork, or beef and puree all. Sometimes I would whisk in an egg to add additional protein. You can always add vegetables such as spinach and others and blend it up. My twins then were premature, very young and doctor said they would only grow to be as tall as five feet four inches. Well, they are grown up now and both stand at 5 feet 9 inches. I am not saying my porridge provides the height, but there are ways one can prepare porridge to provide a good nutritional value for young children and for the sick.
